Wrap Your Head Around These Creative and Tasty Cabbage Rolls
Cabbage rolls are a great appetizer option for many different dishes. While this recipe calls for using ground pork you could just as easily use beef, lamb or even ground chicken. There is a lot of room to play with the sauce for this dish. This recipe calls for using the marinara recipe from the sauces chapter. I can also tell you that I recently used the romesco sauce recipe for this dish and fell in love with it.
Medium stock pot
Large work bowl
Large sauce pan
13” X 9” roasting pan
10 large leaves of savoy cabbage
1 pound of ground pork
2 teaspoons kosher salt
1 tablespoons of coconut oil
1 medium red onion, minced
1 jalapeno pepper, minced
4 cloves of garlic, minced
1 teaspoon of paprika
1 teaspoon of salt
1 teaspoon of fresh cracked black pepper
Here is how to make the best Cabbage Rolls ever:
Step 1: Bring 1 gallon of water to a boil in a medium stock pot over medium-high heat. Preheat the oven to 350 degrees.
Step 2: Prep your sauce of choice, per the recipe from the sauce chapter.
Step 3: Core the cabbage and separate 10 leaves.
Step 4: Add half of the salt to the water, reduce the heat to low. Add the cabbage leaves to the pot and allow them to blanch for 4 to 5 minutes or until softened.
Step 5: Brown the ground pork in a medium sauce pan along with the coconut oil, onions, jalapeno, garlic, paprika, salt and pepper. Continue to break up the pork with a spatula so that you have a fine, loose texture.
Step 6: Remove the cabbage leaves from the pot. Lay them out individually on a cooling rack and dab off any excess water with a paper towel.
Step 7: Cut the fibrous stem from the base of the cabbage leaves so they can lay flat.
Step 8: Scoop a small amount of the pork mixture into the middle of the cabbage leaf.
Step 9: Roll the leaf over, then tuck the ends and continue to roll until everything is sealed.
Step 10: Carefully lay each cabbage roll into the roasting pan.
Step 11: Pour the sauce over top and cover with tin foil. Then place the roasting pan into the oven and bake for 45 minutes.
Step 12: Take the pan out of the oven, remove the foil and plate immediately.
